Red Velvet Cuppies
2 1/2 cup cake flour -
sift
2 tbsp cocoa powder
1 tsp salt
1 1/2 cup veg oil
2 large eggs ( room
temp)
1 tsp red gel
1 tsp vanilla essence
1 cup buttermilk (1
cup of milk + 1 tbsp vinegar set aside min 30 mins)
1 1/2 tsp baking soda
2 tsp white distilled
vinegar
Method: Cake flour, cocoa & salt (Whisk)
Sugar and oil (whisk
on medium speed)
Add eggs 1 at a time,
mix in colour and vanilla
Reduce speed to low
Mix in flour mixture
in 3 batches alternating with 2 addition of buttermilk
Baking soda &
vinegar (last 12 seconds)
Bake at 180 degC for
20 mins
Cream Cheese Frosting
100gm icing sugar
]
250gm cream cheese ]
whipped
10gm butter
]
optional 1/2 box Non
Dairy Cream - whipped
Method : Mix cream cheese mixture into Non Dairy
Cream mixture
