I failed to raise the egg whites 3 times now. I kinda get it at my fourth attempt. my aged egg whites were bad! So fresh room temp eggs did it this time. They were smooth, pretty raised evenly. But they were baseless cookies with feet?! My macaron baking mat has failed to give me a base every time. Will try to use my artisan baking mat and parchment paper today.. I have 2 days to do this right...
